    Ricotta Puffs

    1 lb. ricotta
    2 tablespoons sugar
    1 teaspoon vanilla
    3 eggs
    1 cup flour
    4 tablespoons baking powder

    Beat eggs, add sugar, vanilla, ricotta, baking powder and let stand one hour. Add flour and mix. Deep fry!

    You can add powdered sugar when they come out of the deep fryer.

    Mac n Cheese

    Ingredients

    • 1 lb. rotini or cavatappi
    • 2 c. whole milk
    • 8 oz. cream cheese
    • 3 tbsp. unsalted butter
    • 1 tsp. fresh-ground pepper
    • ½ tsp. salt
    • 1½ c. grated sharp Cheddar
    • 1½ c. shredded smoked Gouda
    Directions
    1. Cook the pasta and make the sauce: Preheat oven to 350 degrees F. Cook the pasta following package directions. Strain the pasta, rinse with cold water to cool and prevent clumping, drain well, and transfer to a large bowl. Set aside. Combine the milk, cream cheese, butter, pepper, and salt in a medium saucepan. Cook over medium heat, stirring occasionally, until the butter and cream cheese have melted -- about 10 minutes.
    2. Assemble the macaroni and cheese: Toss the Cheddar and Gouda with the reserved pasta. Add the hot milk mixture and stir until well combined. Transfer pasta to a 3-quart baking dish and bake until the macaroni is set and the top is golden brown -- about 30 minutes. Divide macaroni and cheese among 8 plates and serve hot.

  3. Sounds awesome!.(can you put some sort of breadcrumbs on the top?I was thinking sprinkle some nutmeg on top to?).........
    I made the roast sweet potatoes last night.my first go.I used to much butter and forgot the olive oil.I burnt them a bit to.but they were still gorgeous!...my God I've never had them before.but will be marking them again to night!..any ideas what to serve them with?.I had grilled chicken breast with the ones last night.and it went well together........

    Get Panko breadcrumbs. Toast them in a pan and you can add them to the top.
     
  6. Sounds nice.are they like Asian bread crums?....and sorry to be a pain.but what's a good rub for chicken breast?.or sauce?..with the roast sweet potatoes I just had plain chicken breast (grilled,salt and pepper).and it was fine.but just after jazzing it up a bit...

    Yes, it's like Asian bread crumbs. They are not as "fine" as the regular ones.

    Here's a marinade for chicken:

    Ingredients
    • 1/2 cup extra virgin olive oil
    • 1/2 cup balsamic vinegar or other vinegar
    • 1/4 cup soy sauce
    • 1/4 cup Worcestershire sauce
    • 1/8 cup lemon juice
    • 3/4 cup brown sugar
    • 2 tsp dried rosemary
    • 2 tbsp Dijon or Spicy Brown mustard
    • 2 tsp salt
    • 1 tsp ground black pepper
    • 2 tsp garlic powder
    • 6 chicken breasts or 3.5 lb chicken

    • Greek Lemon
    • 1 tbsp olive oil
    • 1 lemon, juiced
    • 3 cloves garlic, minced
    • 1/2 teaspoon oregano
    • 1/2 teaspoon basil
    • Sprinkle of salt
    • Freshly ground pepper

    INGREDIENTS
    • 1 tbs paprika (hot/mild/smoked)
    • 3 tsp kosher salt
    • 1 tbs garlic powder
    • 1 tbs brown sugar
    • ½ tsp cumin
    • 1 tsp sage
    • 1 tsp oregano
    • ½ tsp cayenne
    • 1 tsp black pepper
    • ½ tsp ground coriander

    they look like a cream puff. They taste like a cream puff:D The ricotta cheese makes them fluffy and light.

    I always use a mix of Panko and Parmesan to sprinkle on my Mac n cheese
