Thats ole country cowboy boy food right there, LWG. Chitlins, spelled Chitterlings, are good too. And the best pig you can ever eat is killed fresh and straight off the grill cooked overnight.

Chicken fried steak and bisquits and gravy is how i judge a breakfast spot. Some places use old bisquits and think no one will notice if its soaked in gravy. I really cant stand when places bread fish and chicken fried steak in the same flower. If they cant do that right i wont be back. Chicken and waffles is good too any time of the day. My dad use to make scrapple but that was a little too country for me.

Well a chicken fried steak is just that, They take a piece of steak and they beat it out so it is nice and tender and thin. Then they dip it like you would chicken and then you fry it like you would chicken. A lot of people put brown gravy on it and that has no business even getting close to a chicken fry let alone being put on it, Good cream gravy is what you need on it and you need to not be able to see the meat and taters for it to be right. I make them all the time and I enjoy them quite a bit.

I am also a big BBQ guy, I love to BBQ briskets, Hot links, Sausage, Ribs, Pork shoulders, Turkey and things of that nature. I actually built a brick BBQ pit at my home and used it for years.

Another good thing you need to try is a deep fried turkey, Word of caution if you go and buy a turkey fryer and decide to do it. Make sure your bird is thawed out and not very cold, You put a ice cold bird of one that is frozen in that fryer that oil is going to over flow and hit the flame under neath the fryer and your liable to burn down your home and the rest of the neighborhood before you can get it out. But a deep fried turkey is one of the best things you can ever eat.

Another good thing to eat is squirrel and pone, Good deep fried squirrel and pone will fill you up and stay with you. I like good fish as well, I used to have big crawdad boils and things all the time at my house and that never failed to make me happy, lol.

I can go on and on with food, That is one of my favorite past times right there.

my grandmother was a texas woman (who married a yankee, from NY no less lol)...and my mom raised us on all the best southern recipes.

she made me sausage gravy this morning...the best meal anyone could ask for. there has been NO ONE she's made it for that hasn't claimed it to be the best breakfast they've had. my whole family comes running when they know she is making it.

    what is scrapple?

  16. BringBackup

    BringBackup Top Dog

"Scrapple (Pennsylvania Dutch) is traditionally a mush of pork scraps and trimmings combined with cornmeal and flour, often buckwheat flour and spices. It is similar to pon haus, which uses only the broth from cooked meat. The mush is formed into a semi-solid congealed loaf, and slices of the scrapple are then panfried before serving. Scraps of meat left over from butchering, not used or sold elsewhere, were made into scrapple to avoid waste. "

Chitlins, spelled chiterlings, are good as well. Old Timer, Alot of folks I've ran into don't know much about brisket, if you don't know how to cook it, it might turn you away. But, brisket is a very good cut of meat, not for the novice bar b quer.

Oh my, brisket is delicious. Definitely one of my favorite things to eat. It's also my favorite part of a live cow, lol. Seriously, it is cute as hell.

Chitlins smell god awful, I have no idea what it is like cooked up. I have people buy that at my work, and I run to wash (anyone else pronounce this WORSH like me? :D) and sanitize my hands afterwards to get that smell out! I've ate chicken feet before though, so I can't go around complaining about what other people eat hah.
